Suet is the raw, hard fat of beef which is then rendered to make tallow. Suet which has been melted simmered and strained then allowed to cool is then used in cooking and frying and cosmetics. Advantages are the high smoke point making it ideal for deep frying and pastry making and in cosmetics such as moisturisers and soaps where the tallow contains essential vitamins and nutrients while being close to the composition of human skin’s natural sebum.
